2 Ways Marinated Tofu

Something amazing happened last month…we finally figured out the PERFECT tofu marinades! It only took us almost a year of trying different spices, juices and flavorings. Tony is more of a spice lover, while I love the savory flavors. These recipes for tofu are the perfect combo of the two!  

To be honest, we don't want a bunch of sugar and oils in our marinade. Whenever I ask others what they use for marinades, I almost always hear SUGAR. No, thank you. 

 

 

These flavors are inspired by my friend Bianca who is an excellent cook. She often cooks authentic Mexican dishes for her family and is the queen of marinades in her household. These are clean, natural and flavorful ingredients that you can feel good about serving to you and your family! 

 

 

Bianca’s Orange Tofu Marinade:

1 block organic tofu 

3-4 large oranges

2 lemons 

1lime 

1/3 cup avocado oil 

2/3 garlic clove 

1 quartered red onion

Salt to taste 

 

Squeeze fruits, chop the garlic and onion very fine,and whisk with all other ingredients (not the tofu yet) until consistent. 

Place the tofu in a pan or bowl (we used a bread pan) and cover with the marinade. We placed extra onion on our while marinating for extra flavor! Let the tofu sit for 4 hours at the least. If you can, marinate overnight for the best flavor! 

Place tofu on HOT grill, do not flip too much as the tofu will stick. Cook on each side until tofu has a brown crispy layer on the outside. Use remaining marinade to baste while grilling.

Cucumber Serrano Tofu Marinade:

1 block organic tofu 

 

4 Serrano Chilies

5-6 limes (juiced)

1/3 cup cilantro

Salt to taste

1/2 small red onion

1/3 cucumber

Blend chilies, lime juice, cilantro and a dash of salt. Blend until the chilies are broken up/ a slight paste. Cover the tofu and marinate for 15-20 minutes. (or over night if desired) 

During this time, peel the cucumber and scrape out the seeds. Cut into small cubes. 

Place tofu on HOT grill, do not flip too much as the tofu will stick. Cook on each side until tofu has a brown crispy layer on the outside. Use remaining marinade to baste while grilling. Serve tofu hot with the cold cucumber slices on top for extra consistency and texture! Served best with a warm tortilla and avocado slices!
